Colombians are characterized by loving their country, traditional dishes and culture. And although they are far away, they are always looking for a way to stay in touch with their traditions. This is why the Consorzio Ortofrutticolo Padano has decided to pay homage to this country with a recipe for arepa with Desmechado and Hogao chicken; One of the favorite foods at home! So far I haven't met any Colombians who don't know arepas or hogao. But if you are not from Colombia, this is your chance to savor the culture and tradition in a delicious dish!
Ingredients
For the chicken:
One chicken breast on the bone
4 cups of chicken broth
For the hogao sauce:
Two tablespoons of vegetable oil
3 green onions, chopped
One cup of tomato, peeled and chopped
A minced clove of garlic
One teaspoon of ground cumin
¼ tablespoon of annatto powder
Salt and pepper to taste
For the arepas:
½ cup masarepa (paste for arepas)
½ cup of hot water
Two tablespoons of butter
Salt to taste

Chopped avocado, to taste
Fresh cilantro, to taste
Instructions
To make the chicken: Cook the chicken with the broth in a medium saucepan for 25 minutes or until the chicken is soft. Discard it with a fork or with your hands. Booking.
To make hogao: Heat the vegetable oil in a skillet over medium heat. Add the onion and cook for about 3 minutes.
Add the chopped tomato and garlic. Reduce the heat and cook for about 8 minutes.
Add the cumin, annatto, salt and pepper. Cook for another 3-5 minutes or until the sauce thickens.
For the arepas: add the masarepa, hot water, 1 tablespoon of butter and salt. Mix well. Let it rest for 5 minutes.
Knead with your hands for about 3 minutes. Wet your hands with water as you form the dough.
Shape the dough into 2 balls. Place each ball between 2 plastic bags and, with a little lid, flatten them.
Add the butter to a non-stick pan over medium heat. Place the are-pas in the pan and cook for about 3 minutes on each side, until golden.
To serve: Place an arepa on a plate and serve the chicken on top. Add chopped avocado and fresh cilantro. Serve and Consorzio Ortofrutticolo Padano wishes: good appetite!
